Spring Quinoa Salad

Sometimes you just crave a fresh, crunchy salad but don't feel like the boring lettuce routine. Quinoa, bulgar wheat and cous cous are amazing additions to bulk up and add some extra protein, fiber and nutrition to your salad. As well as getting creative with what else you add to your salads from veg to nuts to dried/fresh fruit, ditch the boring Greek salad!
All of our recipes are ideas for you to try out to expand your cooking skills and to try out new yummy food, try out our recipes and also change up or add stuff! You have to eat the food you make so make sure you're making food you'll enjoy, don't force feed yourself bowls of kale just because it's healthy.
Ingredients:
(About 2-3 people)
1 cup quinoa (we used red + white quinoa from Woolworths)
Cucumber
1x onion
Cherry tomatoes
1-2 carrots
1/2 cup lentils
Fresh parsley / coriander / chives / rosemary / any fresh herbs
Dried cranberries / goji berries / any berry you want
Sunflower seeds & flax seeds / any nut or seed you want
Lemon juice & Olive oil / any dressing or sauce you want
Salt, pepper & spices
Avocado
Method:
Prepare your quinoa as per package instructions.
Cook the lentils in a small pot on the stove in hot water until soft.
Chop up the cucumber, tomatoes and onion in small pieces and grate the carrot.
Chop the fresh herbs finely.
Once quinoa is cooked to preferred texture, add it to a large salad bowl and mix in the lemon juice, olive oil and all the spices.
Then mix in all of the lentils, cucumber, tomato, onion, carrot, cranberries, seeds and fresh herbs together.
Slice up an avo and place on top (or mix in), dish up a bowl and dig in!
